Something magic with oranges


Let's start with something concerning both chemistry and food , wich is the aim of this blog .Let's take an orange and let's talk about something that is usually wasted : the peel .
If you squeeze the peel near a candle flame , the squirts suddenly take fire .Amazing eh ?
This appen because in the skin of citrus fruits there are glands containing the volatile oil responsible of theirs characteristic flavour .
This oils are often quite flammable .

those oils you are refering to are limonene, right? They have a flashpoint of 48 degrees of C. the (+) enanatiomer gives the odor of oranges and the (-) enantiomer gives the odor of lemons. The limonene molecule is chiral, meaning there is no symmetry in it...
