Recipe of the week : chocolate mousse

Ingredients per 4 people :
Chocolate : 75 g black chocolate
60 g sugar
50 ml water
2 eggs white whipped
230 g whipped cream
Caramel sauce : 4 eggs yolk
120 g of caramel
60 g sugar
Chocosauce : 1 dl water
30 g cocoa , 30 g cream

Preparation : heat in a high pan the black choco , water and sugar .When the boiling point is reached continue for 3 minutes and let it cool down .Combine it with the white and the cream , whip the dough , warming it on a pan of boiling water , and make it a zabaione .
For the 2 sauce just mix the ingredient on the boling water pan tryng to incorporate much air as possible .
Finally take four small glasses , pour fist the choco , than a thin layer of caramel and finally the chocosauce .Keep it in the fridge for at least 2 hours .
